The versatility of pork is unmatched, you can mix and match ingredients to create your own version while staying cost effective, nutritious, and oh so delicious! This stuffed spaghetti squash is a summer and fall time mouth watering favorite!
Sausage Stuffed Spaghetti Squash
Serves: 8 Prep time: 10 min. Cook time: 40 min.
Ingredients:
- 1 Spaghetti Squash 3 lbs (~$5)
- 1 lbs Italian Ground Sausage (~$4)
- 8 oz Shredded Mozzarella Cheese (~$2.50)
- 4 oz Shredded Parmesan Cheese (~$2.50)
- 1 Tbsp Olive Oil (~$7)
Directions:
- Preheat oven to 400°F.
- Slice spaghetti squash in half. Scoop out the seeds in the center. Brush each half with olive oil.
- Divide the sausage equally between the two halves.
- Roast for 30 minutes or until sausage reaches an internal temperature of 160°. Remove from the oven, but keep oven on.
- Use two forks to separate the sausage into small chunks and to separate the squash into strands. Mix all together.
- Combine cheese and divide the mixture between the two halves and roast for an addition 10 minutes or until cheese is bubbly and begins to caramelize.
- Enjoy right away!
Notes:
- You can also cook sausage in skillet while squash roasts and then complete the rest of the recipe the same way. If done this way, do not remove excess moisture, this will add flavor to the squash.
