  • 4 oz garlic and herb goat cheese
  • Salt and pepper to taste

Instructions:

  1. Prepare the Puff Pastry: Preheat your oven to 350°F (175°C). Thaw the puff pastry sheet according to package instructions. Once thawed, unfold the puff pastry onto a lightly floured surface. Use a rolling pin to spread out your puff pastry, if needed. 
  2. Spread the Goat Cheese: Using a butter knife or the back of a spoon, spread an even layer of the garlic and herb goat cheese over the puff pastry, leaving a small border around the edges.
  3. Prep the Tomatoes: Slice your garden-fresh tomatoes into thin rounds. Lightly salt the slices and let them sit for a few minutes to draw out excess moisture. Pat the tomatoes dry with a paper towel to ensure your pastry doesn’t become soggy.
  4. Assemble the Pastry: Arrange the tomato slices on top of the goat cheese layer, slightly overlapping them if needed. Season with a bit more salt and freshly ground black pepper.
  5. Bake: Place the assembled puff pastry on a baking sheet lined with parchment paper. Bake in the preheated oven for 15-18 minutes, or until the pastry is golden brown and crispy.
