These delightful pastries are not only adorable but also incredibly easy to make. Easter Bunny Puffed Pastry Recipe:

Ingredients

– 1 sheet of puff pastry, thawed

– 1/4 cup granulated sugar

– 1/4 teaspoon ground cinnamon

– Optional: sprinkles for decoration

Instructions

1. Preheat the Oven: Preheat your oven to 400°F and line a baking sheet with parchment paper.

2. Prepare the Puff Pastry: On a lightly floured surface, unfold the thawed puff pastry sheet. Roll it out slightly to smooth any creases.

3. Sprinkle with Cinnamon Sugar: In a small bowl, mix together the granulated sugar and ground cinnamon. Sprinkle the cinnamon sugar evenly over the puff pastry sheet. Roll the cinnamon sugar into the pastry so that it better stays on. Have a heavy hand with the cinnamon sugar! 

4. Cut out the bunny shape. Here is a link to an Easter Bunny Cookie Cutter. Or use any shape you would like. In this one, I made my own bunny by taking a cookie cutter I will never use and shaping it myself. 

I also made some simple cinnamon sugar twists and some palmier cookies at the same time! It’s hard to go wrong with puff pastry. 

5. Bake: Bake the bunny palmiers in the preheated oven for 7-10 minutes or until they are puffed and golden brown.

6. Decorate: Once the palmiers are baked and cooled, you can add additional decorations, such as sprinkles or icing accents, if desired.

These simple cookies would also be great used as a sandwich cookie with whipped cream in the middle! 

7. Serve and Enjoy: Arrange your adorable Easter Bunny palmiers on a platter and watch as they disappear before your eyes! These sweet treats are perfect for Easter brunches, parties, or simply as a fun snack for the family to enjoy.
